This extraordinary creation is the result of a harmonious blend of 55% Chenin Blanc and 45% Chardonnay grapes, handpicked from dry-land farmed vineyards nestled in the Western Cape region. These vineyards, strategically situated on southwest-facing slopes, are perfectly positioned to capture the cooling breezes from the nearby Atlantic Ocean and the cold Benguela current. The soil, a rich blend of decomposed granite and clay, ensures optimal drainage for the vines.

The winemaking process begins with a meticulous 14-day fermentation at a controlled temperature of 14-15°C. To preserve the wine's inherent fruitiness and prevent oxidation, the grapes and juice are handled reductively. Following fermentation, the wine rests on lees for two months, imparting a delightful complexity to its character.

The magic touch comes with the gentle dealcoholization process, which employs state-of-the-art spun cone technology under vacuum and at low temperatures.
