The temperate climate around Lake Balaton offers long, even ripening conditions, with cool nights helping retain freshness in the grapes. Vines are pruned using the Double Guyot method to balance yield and quality, while the grapes are hand harvested between September and October to select ripe, healthy fruit.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eIn the winery, the grapes undergo cold maceration before fermentation to help extract colour and aromatic character.
